Here's a great video of a guy catching a low thermal....and I mean low!
Notice how he never ever lets the nose come up.  He has a nice speed for controllability/maneuverability and either model goes up or it doesn't.  If he ever let the nose come up the plane would slow and he'd had lost that thermal.
